Customer Feature: Ciao Thyme Wood Fire Kitchen

Ciao Thyme Wood Fire Kitchen, located in the historic heart of downtown Little Falls, Minnesota, is more than just a place to grab a bite—it’s a community-driven dining destination. Owners Phil and Susy Prosapio, along with Executive Chef Scotty Stocco, have created a space that brings people together, celebrates local culture, and serves up the best wood-fired dishes in town.

Phil and Susy are dedicated to making Little Falls a vibrant, welcoming place to live and visit. Their passion for the community led them to renovate eight empty buildings in the historic district, creating opportunities for new businesses to grow. With the opening of Ciao Thyme Wood Fire Kitchen just before Thanksgiving in 2023, they’ve added a delicious new reason to visit downtown.

Scotty, the Executive Chef at Ciao Thyme, is a rural-born, music-loving, eclectic chef who brings his unique flair to every dish. His love for cooking dates back to the fourth grade, and he’s been a professional chef for over 15 years. His journey has been driven by passion, as he says, “I’ve wanted to be a chef since I was very young.” Scotty’s favorite part of his role? “Workshopping a vision and seeing it come to life.”

For the Prosapios, the joy of owning a business lies in seeing people come together to enjoy great food and a fun experience at both the restaurant and the attached Falls Theatre. “Seeing people come into the restaurant and theatre, have an enjoyable experience, and compliment our wonderful food and service,” they say, is incredibly rewarding. 

When it comes to favorites, Scotty’s go-to pizza is a classic Margherita—simple, fresh, and delicious. Meanwhile, Phil and Susy are fans of the St. Mathew, a hearty, meat-laden pizza named after the lead foreman who helped renovate and build the restaurant. No matter your preference, there’s something for everyone at Ciao Thyme.
