La Flamme

 

Anne Besset, owner and founder of La Flamme in Oakland,California, wanted to recreate the traditional thin crust pizza of her childhood called “Tartes FambĂ©es”. In French, this traditional dish of Alsace uses a very thin crust, few but savory ingredients; thin sliced onions, Ventreche ( thick cut bacon strip ), cream, mushrooms and more.

Pizza is ready to be served just a few seconds in the wood fired oven fired at 1,000 F.

 

 

The oven is the Four Grand Mere 1030 C on a Napa Trailer. The ovens “Work like dream” says Anne and the response from local customers has been fantastic.
