The new 1500 wood fired oven mounted trailer is now finished and we have made it available to the community.
Last week we partnered with The Village Baking Co. and made the trailer available to them.
They baked some very nice bread in it.
Then we made some focaccia pizza with succulent toppings such as créme fraiche with caramelized onions and bacon or goat cheese with figs.
Dallas is a big city but the news spread like crazy and it was such a hit that we got a couple of articles in the local newspapers.

Then Friday we got a call asking us to attend the Bastille Day celebration on Sunday. Despite the rain the turn out was fantastic and we cooked over 150 of those focaccia pizzas in under 1.5 hours.
The 1500 size oven performed extremely well. It got up to temperature in record time and stayed at the right temperature with minimal wood.
