This recipe for Cranberry Beef Bourguignon is delicious and easy to make in your wood-fired oven, perfect for those cold winter days!
Ingredients:
- Bacon
- Beef
- Flour
- Beef Broth
- Garlic
- Salt
- Pepper
- Thyme
- Red Wine
- Olive Oil
- Bay Leaves
- Tomato Paste
- Butter
- Cranberries
- Onions
- Mushrooms
- Carrots
Recipe:
- Heat the oven to 250Â degrees.
- Chop the bacon into smaller pieces, add to the cast iron skillet and sauté in the oven.
- While the bacon cooks, chop the other vegetables.
- Once the bacon has cooked, remove from the skillet and set aside.
- Dry your meat, then add to the skillet with the fat from the bacon, tossing to coat evenly, before placing the skillet back into the oven.
- Once the beef is cooked, remove it from the pan and set it aside with the bacon.
- Add the onion to the meat drippings in the skillet, season with salt and pepper, before returning the skillet to the oven to cook the onions until tender.
- When the onions are cooked, remove the skillet from the oven and deglaze with cognac.
- Add the meat back to the skillet and toss with the onions before transferring to a dutch oven.
- Clean the pan with beef broth and red wine, before pouring it all back into the dutch oven.
- Add the cranberries, tomato paste, bay leaves, garlic, thyme, carrots and mushrooms to the dutch oven.
- Season with salt, cover with the lid and place the dutch oven into the oven for about 2 hours.
- Serve and enjoy!
