CRANBERRY CHRISTMAS CAKE

Fresh Cranberries mixed with a buttery cake make this a great holiday dessert or a morning coffee cake!

It serves about 16 people – easy to make, and takes a short amount of time to prepare!

Ingredients:

 3 eggs

2 cups sugar

12 oz fresh cranberries

1 tsp vanilla

Âľ cup of softened butter

2 cups all purpose flour 

Instructions:

Preheat oven to about 350F. Using a mixer – beat the eggs and sugar together until thickened, approximately 5-6 minutes. Do not skip this step! Add the softened butter and vanilla and mix for 2 more minutes.

Stir in the flour just until combined. Then add the cranberries and lightly mix.

Butter a 9×13” pan. Pour in the batter and bake for 40-50 minutes (or until very lightly browned). You can insert a toothpick in near the center of the cake – if it comes out clean it should be ready to take out of the oven. Let it cook completely before cutting. Smaller slices are better – about 2”.
