There is nothing like Madeleine to go with your coffee. Here is my recipe for this savory treat.
Ingredients:
- 115g unsalted butterÂ
- 2 large eggs
- 100g granulated sugar
- 2 teaspoons lemon zest or 1tsp lemon extract
- 1 teaspoon pure vanilla extract
- 115g all-purpose flour*
- 1/2 teaspoon baking powder
- 1 pinch salt
Recipe:
- Preheat the oven to 400 F
- With an electric mixer, whisk the eggs and the sugar until it is light and foamy
- Add the butter and mix
- Mix together in a separate bowl the flour, salt and baking powder
- Then fold in with a spoon or spatula the dry mix into the batter, one spoon at a time to keep it foamy
- Brush some butter in the mold
- Give the mix 30 minutes to rest in the fridge
- Spoon in the mix in the mold
- Bake for 10 minutes
