Wood-fired Smoked Salmon Pizza with Goat Cheese and Hot Honey

This pizza recipe may be a bit out of the ordinary. However, you will find the smoky taste of the Salmon and the tartness of the Goat Cheese pair well with a drizzle of Hot Honey on top of your pie.

For a 12″ pizza you will need:

  • 280 gr or 10 oz pizza dough ball
  • 2 oz of Crème FraĂ®che
  • 4 oz of Smoked or Cured Salmon
  • 2 oz of Goat Cheese
  • 1 oz of Blue Cheese
  • 1 oz of Hot Honey

The first thing you will need to do is make sure your oven is hot enough for cooking pizza. The floor should be at about 700-750 degrees Fahrenheit.

Then you will stretch your dough ball into a 12 inch circle.

Using a large spoon, spread the Crème FraĂ®che in a circular motion starting from the middle of the dough working outwards. Keep 1″ all around the outer edge without any Crème FraĂ®che.

Next, separate you’re Smoked salmon into thin strips. Apply these strips on the pizza so they don’t overlap.

If your Goat Cheese is not already crumbled, break it apart carefully with your hands and crumble it with your fingers. Sprinkle the Goat Cheese all over the pizza.

Repeat the previous step with the Blue Cheese.

Make sure your fire is pushed to the side or back of the oven.

Bake your pizza for 2-3 minutes. Rotate your pizza with your pizza peel so it cooks evenly.

Remove from the oven and place on cooling rack.

Drizzle with Hot Honey and enjoy!

One of our favorite ways to cook a whole chicken is on a rotisserie in our Wood-Fired Brick Oven. There's nothing like the high heat from the coals combined with the constant rotation to develop all the flavors. The skin will taste like bacon, the white meat will remain juicy, and the light smoke flavor is simply delightful.
